THREE CHEESE MINI NACHOS

As the days get cooler, you can feel Fall is just around the corner and football season is upon us! My husband loves watching the sport and I have been drawn in myself as well. More so than watching the games (which are always fun) I love planning the food spread. Fall brings the feeling of comfort food and nachos are definitely on that list!

When having people over throughout the season I like to serve something warm (and cheesy preferably) and this recipe checks both those boxes! Since sometimes sharing a large platter can be awkward, l am serving the next round of nachos in individual mini bowls so everyone can have their own bite! This gives you your own portion of melted cheese goodness – how can you go wrong with that?!

These mini bowl nachos are super easy to create and only need a few ingredients – the trick is in the cheese! I have selected three all time classics below but feel free to mix it up and make it your own. Also if you really want to be a rebel, you can make this into one large nacho tray (you may have to up the ingredients quantity) but that will work as well. I still say mini individual bowls are just more fun!

Since we are on the topic of nachos I have to say that I am always on the hunt for the perfect salsa – preferably with a peach kick to it! I have a real addiction and I cannot go into a store and see a new peach/mango salsa and not purchase it. My ultimate favourite is the PC Black Label Peach & Mango salsa from the Canadian Super Store. I really recommend it if you have not tried it yet! Another favourite of mine is my parents homemade salsa they jar after every summer season with vegetables straight from their garden. Cannot be beat!

THREE CHEESE MINI NACHOS

Individual nacho cheesy goodness!

Ingredients

  • 30 grams Cheddar Cheese (grated)
  • 30 grams Mozarella Cheese (grated)
  • 30 grams Monterey Jack Cheese with Jalapeño (grated)
  • 20 grams Red Onions (cut into small pieces)
  • 45 grams Tomatoes (cut into small squares)
  • 30 grams Green Olives (sliced)
  • 5 grams Chives (cut into small pieces)
  • 70 grams Tortilla Chips (small circle work best)
  • 3 pieces Cilantro (as garnish - optional)

Instructions

  1. Start by adding a base of tortilla chips at the bottom of the bowl.

  2. Sprinkle in a layer of cheddar cheese and add in a layer of tomatoes.

  3. Put another layer of tortilla chips in.

  4. Add in the mozzarella cheese layer and spread the olives and chives evenly around.

  5. Put in your last layer of tortilla chips.

  6. Sprinkle on the Monterey Jack Cheese around and add in the red onions.

  7. Bake at 350 degrees for 12 mins.

  8. Garnish with pieces of Cilantro when out of the oven.

  9. Serve with a side of salsa.

  10. Enjoy!
