ROASTED GARLIC GUACAMOLE DIP

Our household obsession for avocados has officially reached new heights and I’m definitely not mad about it! My husband and I were grocery shopping the other day and I picked up an avocado to purchase, looked at it for 2 seconds and placed it in our cart. I wish I had a picture of this avocado but it was essentially the size of half my head. Not my hand…not my fist…my head! We are officially those people that buy the largest possible avocado know to man and thoroughly enjoy it!

Now what is the best thing to make with your lovely new avocado? Guacamole obviously! I’ve created a dip with my other obsession – roasted garlic. I promise the two play nicely together! This dip is extremely easy to make and extremely easy to finish in one sitting – I suggest doubling or tripling the recipe if you have a few people over!

My love for roasted garlic is real and I love to make a few bulbs at a time to keep for various recipes. If you have never made it before I promise it is very easy! Instructions are listed below and additional pictures can be found on this post. Since it is roasted it does not have a strong garlic flavour that takes over the dip. It blends easily in taste and just adds that extra pop of flavour. The chili flakes barely add any heat and but feel free to keep them off OR add in additional when combining the ingredients.

JMS TIP: Cilantro pairs very well with this dip – obviously since it’s essentially guacamole’s best friend! My husband does not enjoy it therefore it’s a losing battle when making things for the both of us. He claims it tastes like soap – I claim his taste buds are crazy! Ha! If you do enjoy it I would definitely recommend throwing it in! Don’t be fooled by the pictures – I only used it as a garnish for 3.423 seconds.

I find dips to be such a great appetizer when hosting – people can graze on them as you finish up the main meal and it fills them up enough to be satisfied until more food is offered!

ROASTED GARLIC GUACAMOLE DIP

Ingredients

  • 1 bulb Roasted Garlic
  • 3 medium Avocados
  • 1 1/2 whole Limes
  • 1/2 Red Pepper (chopped in tiny pieces)
  • 1 pinch Salt + Pepper
  • 1 pinch Chili Flakes (to garnish)

Instructions

STEPS IN ORDER

  1. In a medium sized bowl combine garlic, avocado and lime.

  2. Mash everything together until you get your desired guacamole texture. I like to keep it pretty chunky!

  3. Season with a pinch of salt and pepper. Start slow - you can always add more depending on preference.

  4. Add in the chopped red pepper pieces and stir until combined.

  5. Season with additional salt and pepper if required. Garnish with chili flakes on top of dip.

  6. Enjoy!

INSTRUCTIONS FOR ROASTED GARLIC (can be made in advance)

  1. Cut a thin layer off the top of the bulb. 

  2. Pour some oil (sunflower, grape seed etc.) over the bulbs and sprinkle with salt and pepper.

  3. Bake at 350 degrees for 40 minutes until the garlic is tender and has browned.

  4. Once cooled you can squeezeeee the garlic pieces out or pop them out individually with a knife/fork. They come out very easily!
