IKEA POTATO SALAD

To tell you the truth, normally I am not a fan of potato salad! I just haven’t found one I loveeee……but that all recently changed!

Enter the IKEA POTATO SALAD! I know you are probably wondering – did IKEA start making potato salad? Is it served in the food court? Although I’m sure that would be Ah-Mazing….this is not the case. They do have the one product that will change your life forever tho – SÅS SENAP & DILL MUSTARD SAUCE. This is truly the most delicious mustard sauce ever! Seriously that good! Now this sauce is my secret perfect ingredient in making the best potato salad!

Now you may be thinking that a mustard is a mustard and I can just substitute for anything else. Now yes – technically speaking you could use another mustard and the salad would be edible. Just like you could substitute no name waxy dollar store chocolate for your finest Lindt or Ferrero Rocherre – understand the difference? Ha! Trust me it’s worth the drive to IKEA for this mustard alone. I have literally gone for it….just it (not a bookshelf + mustard combo) but thankfully I’m only 25 minutes away! I know some people have to drive over 1-2 hours to get to an IKEA and it’s not as readily available. Promise me next time you go (whenever that is) you will pick up a jar….or 5! It’s amazing on so many different items but I won’t bore you with that now (send me a private message – JK!). This is starting to sound like an IKEA collaboration and unfortunately I’m actually awake and not dreaming.

The star of the show….

I have personally made this salad on many different occasions and it is always a hit with the crowd. It makes quite a decent portion and can feed the group. You can serve it in one big dish or divide it up between a few tiny bowls – whatever works best!

JMS TIP – This salad can also be made ahead of time and is still equally delicious! If you prefer to put your food together closer to the time that guests arrive, you can still boil your eggs and potatoes ahead of time and chop your chives up early. Personally I like my potato salad slightly warm/room temperature but it can be served cold as well.

I hope this has inspired you to try something new! My love for this mustard runs very deep if you could not tell! Be right back as I go eat it straight from the jar…HA!

IKEA POTATO SALAD

Best potato salad ever!

Course Salad
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings 8 people
Author JOANNA

Ingredients

  • 8 medium Potatoes
  • 7 hard boiled Eggs
  • 3 tbls Mayonnaise
  • 4 tbls Ikea Dill Mustard
  • 3 tbls Chives (chopped into small pieces)
  • 3/4 tsp Salt
  • 3/4 tsp Pepper

Instructions

  1. Peel the potatoes and boil until soft.

  2. While potatoes are cooking, boil 7 eggs until hard (I put on an 8 min timer ONCE the water starts boiling).

  3. Once eggs are cooked and have cooled, chop them into rough square pieces (about half an inch big) and place into a bowl. This does not need to be perfect - as long as the eggs have been chopped down to smaller pieces you are good!

  4. Once the potatoes are drained, mash them slightly in the pot. Overall this salad is meant to be CHUNKY! As you mix the ingredients together the pieces break down even more therefore at this point keep them a bit larger.

  5. Add the potatoes into the bowl with eggs.

  6. Add the mayonnaise, mustard, chives, salt and pepper in.

  7. Mix together until well combined. Depending on how large your potatoes were you may need some additional seasoning. Feel to add in some additional salt and pepper if required.

  8. Garnish with some chopped chives on top.

  9. Enjoy!
