SWEET KIWI LIME DAIQUIRI

Have you checked the calendar recently? HOW is it March already! Not even March…..MID March! This month….year….is flying by!

Also this weekend is St. Patrick’s Day (just in case you didn’t realize due to the flying of days I mentioned above)  which does provide a good excuse to kick back and relax a bit! I’m not a huge fan of celebrating St. Patty’s day out – it’s crowded and noisy but I am not opposed to celebrating at home with a delicious cocktail! Being Saint Patrick’s Day I thought it was perfectly fitting to create a green fruity beverage to enjoy. Now normally you mainly see green beer but I’m not a huge fan of beer and leave that for my husband to enjoy. Ha! Fun fact – my husband’s name is Patryk (yes spelled that way) and he insists that we celebrate St. Patryk’s Day! I have literally written St. Patrick’s Day incorrectly about 44 times today! So instead of the typical green beer I have decided to class up this joint, throw in our daily serving of fruit (not quite but I try ha!) and present you with this fabulous Sweet Kiwi Lime Daiquiri.

Personally I love me a sweet sweet cocktail which this completely delivers on. Kiwi provides the perfect pop of green to the drink which works perfectly for this St. Patrick’s Day weekend (or any other occasion!). If you prefer your drinks a little less sweet – proceed with caution with the simple syrup and don’t add in the whole amount at once.

This recipe is also perfect for a crowd and easily doubles, triples etc. depending on what is needed. Place all the ingredients in a blender and transfer into a tall pitcher like shown below.

KIWI LIME DAIQUIRI

Perfect way to get in that fruit serving of the day. This kiwi cocktail is deliciously sweet!

Total Time 10 minutes

Ingredients

  • 1 med/lrg Kiwi (peeled and cut into pieces)
  • 1/4 cup Simple Syrup
  • 1/2 cup Water
  • 1/2 tbls Lime Juice
  • 1/2 ounce White Rum (if you like extra strong add the whole ounce!)

Instructions

  1. Place all items into a blender/bullet and blend until kiwi chunks disappear.

  2. Place ice into glass and pour drink over ice. 

  3. Garnish with kiwi slice and mint.

  4. Enjoy!

  5. JMS TIP - Simple syrup is very easy to make and lasts for about a month in the fridge. Take equal parts sugar and water (ie. 1 cup sugar and 1 cup water) and bring to a boil in a pot while stirring consistently. Once the liquid comes to a boil turn it off and place aside. Transfer to a glass container once cooled and store in fridge for up to a month.
