STRAWBERRY COCONUT SMOOTHIE

I cannot think of anything more refreshing on a hot summer day than a fresh cold smoothie! Strawberry season is in full force and I have been loving it so far. For some reason the last few years have been “meh” on the strawberry selection in stores but this year I have already had a few amazing bunches! Can’t wait for more.

I have been wanting to do this flavour combination for a long time and now that summer has arrived, I can’t wait to have this smoothie on rotation. In my pursuit to engage in more dairy free meals, I found a perfect substitute for the regular yogurt I added in parfaits – Yoso Vanilla Coconut Yogurt. It is on the sweeter side of things which makes it a perfect smoothie add in. The mix between strawberries and coconut is the perfect summer blend! PS – how adorable are these owl glasses below ?!

I find smoothies to be extremely universal when it comes to entertaining – a few ideas are:

1) Smoothie pitcher – perfect for breakfast, brunch or lunch gatherings! Triple the recipe below and place in a large pitcher by the drinks for people to pour themselves. Smoothies are not typically found at gatherings and stand out on the food people. I find that people really enjoy them!

2) Smoothie shooters – I absolutely love having smoothie shooters on display for events. I purchase tall shot glasses, place them on a nice tray and fill them up with 1-2 flavours of smoothies. These are a great snack to have especially if you do not want a full glass. I have displayed them at baby/bridal showers, breakfast/brunches, event meetings – everywhere! The refreshing sweet shot is perfect!

3) Frozen lollies – the perfect way to cool down on a summers day! Pour your smoothies into popsicle molds and freeze. When guests arrive take them out and display in a bowl/plate.

JMS TIP: If bringing out any frozen items (ie. the above lollies)  – have some ice beneath where the item is served to keep it cold. For example – fill up a shallow bowl of ice and then place the bowl of lollies on top of it. The ice will keep everything from melting too fast. 

This smoothie recipe is great for entertaining because it is vegetarian/vegan friendly as well as gluten and diary free. It keeps its creamy consistency due to the coconut yogurt which also adds the sweetness combination. You must try!

Ingredients

  • 2 cups Strawberries (cut into quarters)
  • 2/3 cup Creamy Coconut Vanilla Yogurt (dairy free)
  • 1/3 cup Ice (crushed)
  • 1/3 cup Almond Milk (or any milk preferred)
  • 1/2 tsp Vanilla Extract

Instructions

  1. Put all items into blender and blend until smooth.

  2. Enjoy!
