POLISH CUCUMBER SALAD WITH A TWIST

With spring in the air and summer around the corner, I am starting to crave light refreshing meals. One of my go to salads for entertaining offers just that!

This salad below is a twist on the classic traditional Polish cucumber salad – I have been eating this salad for as long as I can remember! It is so simple to put together and literally takes less than 5 minutes. I usually have all the ingredients in the fridge and always have it as a backup plan if I ever need a quick side dish.

The traditional version always includes dill (which I love!) but I don’t always have it around therefore I tend to leave it out. Over the years I have modified the recipe slightly and my favourite version includes an additional crunch of red onion – the pop of colour doesn’t hurt either!

As I recommend it to sit in the fridge for a while (just the cucumbers and salt – explained more in the instructions below) you can prep all your ingredients ahead of time and then put everything together as you are serving guests. Makes for a quick dish!

POLISH CUCUMBER SALAD WITH A TWIST

Light refreshing salad prefect for a summer's day!

Ingredients

  • 2 large Cucumbers
  • 3 tbl Red Onion (chopped finely) (about 45 grams)
  • 1 tbl White Vinegar
  • 1/2 cup Sour Cream or Greek Yogurt
  • 1/2 + 1/4 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Peel your cucumbers and chop into very thin slices. I usually slice mine on the grater - the pieces come out perfect!

  2. Place cucumbers into a large bowl, add 1/2 teaspoon of salt and toss gently.

  3. Place bowl into fridge and let it sit for 30 mins. After 30 mins, drain out the excessive water that has gathered in the bowl. This step allows for the cucumbers to sink in the salt but can be skipped if you require the salad served right away.

  4. Add in sour cream/plain yogurt, onions, vinegar, pepper and remaining 1/4 teaspoon salt. Toss gently together.

  5. Add in additional salt and pepper if required. Place all ingredients into a dish for serving.

  6. Enjoy!
