Light refreshing salad prefect for a summer's day!
Peel your cucumbers and chop into very thin slices. I usually slice mine on the grater - the pieces come out perfect!
Place cucumbers into a large bowl, add 1/2 teaspoon of salt and toss gently.
Place bowl into fridge and let it sit for 30 mins. After 30 mins, drain out the excessive water that has gathered in the bowl. This step allows for the cucumbers to sink in the salt but can be skipped if you require the salad served right away.
Add in sour cream/plain yogurt, onions, vinegar, pepper and remaining 1/4 teaspoon salt. Toss gently together.
Add in additional salt and pepper if required. Place all ingredients into a dish for serving.
