WATERMELON MINT SALSA

I love embracing every season when it comes to entertaining as they each bring out different unique touches – this is especially true when it comes to food. Summer provides us with the most delicious, flavourful fruits and vegetables that are beyond mouth watering. Fall on the other hand has its own gems which help us get cozy for the winter time! As we only have a few weeks of summer left, I am taking full advantage of the seasonal fruit with this amazingly refreshing Watermelon Mint Salsa.

Watermelon is another one of my favourite summer fruits (among cherries and peaches!) and this salsa is perfect for a hot summers day to share with a crowd. Pair it with some nacho chips or mini pita breads and you have the perfect potluck dish!

Super simple to make, it just takes a few ingredients to put together. This was a big hit at our last summer gathering even though some people were slightly apprehensive at first. Once they tried this delicious twist on salsa they were hooked!

JMS TIP: I wouldn’t suggest putting together the salsa the night before because it makes things a little too soggy. You can definitely cut up each item separately and store them in individual containers until the dish is ready to be served. At that time it just takes a minute to combine all your ingredients and you are good to go! 

WATERMELON MINT SALSA

A refreshing twist on your new favourite salsa!

Ingredients

  • 3 cups Watermelon (cut into small cubes)
  • 1/2 cup Red Onion (cut into small pieces)
  • 2 cups Cucumber (cut into small pieces)
  • 1 cup Mint (cut into small pieces)
  • 1/2 medium Lime
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  1. Cut up the watermelon, red onion, cucumber and mint into small cube pieces.

  2. Combine all items into a bowl. 

  3. Toss lightly and serve with chips/pita.

  4. Enjoy!
